Ginger Maple Chicken

4 - 6 pieces of chicken
1/3 cup all-purpose flour
2 Tbsp olive oil
1/2 cup maple syrup
2 Tbsp apple cider vinegar
2 Tbsp freshly squeezed lemon juice
2 Tbsp soy sauce
2 tsp ground ginger
2 cloves of garlic, minced
1/2 tsp pepper
minced green onions (optional) garnish

Toss chicken in flour and shake off excess. In a large skillet heat the oil. Cook the chicken for about 5 minutes, turning frequently, so that the chicken is golden on all sides. Arrange chicken in a baking dish (do not layer.)

In small bowl, whisk together maple syrup, vinegar, lemon juice, soy sauce, ginger, garlic, and pepper. Pour evenly over chicken.

Bake, uncovered, in 325F oven for 30 minutes. Turn chicken over and spoon the sauce over the chicken; cook for 45 minutes or until glaze has thickened and chicken is cooked.

Serve garnished with green onions, optional.

Goes well over rice.
